Recently I was looking for low carb vegetables and remembered one of my childhood favourites – Kohlrabi. First of all, we would eat it fresh as part of our school lunches or my Mum would sauté it in butter with fresh herbs as a side dish. Kohlrabi went a bit out of fashion while kale rearose to stardom again but luckily did not disappear from our markets completely like many other varieties. In the meantime, Kohlrabi dishes got a bit of a modern twist and we tried some new ways of preparing it especially for kids. I was super happy to find fresh and locally grown kohlrabi in my regular supermarket at an unbeatable price.
Kohlrabi, also called German turnip (well that was new to me but explains why it is so popular in Germany) or turnip cabbage, is a biennial vegetable. It is part of the same family as cabbage, broccoli, cauliflower, kale, Brussels sprouts, collard greens or Savoy cabbage.
Kohlrabi is very nutritious and offers various health benefits. Raw Kohlrabi contains even more Vitamin C than citrus fruits and is rich in essential minerals such as Potassium, Manganese, Magnesium, Copper, Phosphorus and smaller amounts of Calcium and Iron. Did you know that it is even a valuable source of VitaminB6, a water-soluble vitamin, which helps our body to convert the food we consume into energy? So, what is not to love in Kohlrabi?
Quick Kohlrabi Fries with vegan mayo
For the fries:
2 medium size kohlrabi
1 tablespoon coconut oil
2 table spoon Cajun spice
2 table spoon flour
Sea salt to taste
FOR THE MAYONNAISE:
2 tablespoon almond butter
3 tablespoon water
2 tablespoon extra-virgin olive oil
1 teaspoon Dijon mustard
1 teaspoon lemon or lime juice
1 teaspoon apple cider vinegar
1 teaspoon maple syrup
Sea salt and freshly grated pepper to tastePreparation:
Peel the kohlrabi and cut into long fries. Place them in a bowl and add the remaining ingredients except for salt and mix well. Pre-heat the oven to 200 Degree centigrade (fan). Place the fries on a baking sheet covered with baking paper. Make sure they do not touch each other. Bake the fries for 10Minutes, then turn them around and bake for another 10 Minutes. Make the mayonnaise by simply blending all the ingredients together. Season with salt and pepper. Season the fries with salt and serve with the fresh mayonnaise.
